How to Make Keto Ladyfingers

Ladyfingers are some of the many people’s favorite pastries to make and enjoy! They can be used as a part of desserts, such as tiramisus, they can be enjoyed with a cup of tea, or even on their own! They have the perfect balance of sweetness, and especially when made with this keto recipe!

How to Make Keto Ladyfingers

Begin by beating 3 egg yolks and 2 teaspoons of vanilla extract. Now add sugar substitute. The amount of sugar substitute is not fixed, itʼs up to you and how sweet you would like your biscuits. Everyone has a different preference for sweet tastes so I prefer to leave the sugar substitute amount open. Continue beating the mixture until all is fully incorporated. The color weʼre aiming is light yellow.

In this recipe, itʼs preferable to use an electric whisker because it will give you more control to get the right consistency of the beaten egg yolks and egg whites.

In a different bowl, whisk 3 egg whites until frothy and fluffy. Add sugar substitute and continue whisking. You can tell that the egg whites are done getting whisked just when they get to the stiff peaks. Transfer the egg whites mixture onto the beaten egg yolks bowl, and gently fold both together. Keep folding until both get well mixed.

Gradually add one and a half cups almond flour and gently fold as you go until all flour is well incorporated into the mixture.

Now transfer your batter into a biscuit press machine and start carefully dispensing the batter on a baking sheet, and make sure there is enough space between each biscuit because they will expand when baking. Bake in a 375 F preheated oven for 11-15 minutes, keep an eye on the biscuits for just when they get golden around the edges.

Let them completely cool down before serving or storing. These ladyfingers are such a great guilt-free pleasure that satisfies the keto diet and still tastes just as good as the non-keto ones, they are a delight for everyone… Keto ladyfingers…

Ingredients
  

  • 3 egg yolks
  • 4 white eggs
  • 2 tsp vanilla extract
  • 1+1/2 cup almond flour
  • sugar substitude

Instructions
 

  • Beat 3 egg yolks and 2 teaspoons of vanilla extract
  • Add the sugar substitute
  • Wisk the egg whites in a different bowl until frothy and fluffy.
  • Transfer the egg whites mixture onto the beaten egg yolks bowl, and gently fold both together
  • Gradually add the almond flour and gently fold as you go until all flour is well incorporated into the mixture.
  • Transfer the batter into a biscuit press machine and start carefully dispensing the batter on a baking sheet, and make sure there is enough space between each biscuit
  • Bake in a 375 F° preheated oven for 11-15 minutes, keep an eye on the biscuits for just when they get golden around the edges.
