140 grams almond flour
120 grams vital wheat gluten ( use vital wheat gluten flour and not gluten flour)
1 1/2 teaspoon instant yeast
3/4 or 1 cup lukewarm water ( neither hot nor cold. Lukewarm can refer to actual temperature.)
1 1/2 teaspoon olive oil or avocado oil
Pinch of salt
Directions
- Mix the yeast into half a cup of lukewarm water and stir it well. If you’re not counting your macros, you can add half a teaspoon of sugar to the mixture. Cover it up and set it aside for about 15 minutes.
- Start making your dough: For the right consistency, it’s important to measure the ingredients accurately. Add the almond flour and vital wheat to the mixer and give it a mix.
- Mixing the dough: Add the salt and oil of preference. Add the water with yeast. Mix at low speed until combined. Add the water
- Keep the dough beating for 7-10 minutes
- Shaping the dough: Take out the dough and knead and fold with your hands for a couple of minutes. Shape the dough into a cylinder and place it in a small pan to rise.
- Place it in your loaf pan. Score the top with a knife.
- Proofing the dough: Cover with a plastic wrap and place in a warm place (such as the microwave).
- Allow to rise for about an hour before baking, preferably without opening it.
- Preheat the oven 350°F / 175°C. Put in the bread and bake it for45-55 minutes
- Allow to cool completely before slicing.
