How To Make Keto Lemon Cake

Cakes are wonderful desserts, but sometimes you want to make a healthier alternative and still enjoy your cravings, I got you. I am so happy to introduce to you my keto lemon cake recipe

Cake Batter:
  • Almond flour (cup and a half)
  • 3 eggs
  • Sugar substitute ( half a cup)
  • Milk (half and half, heavy cream, coconut milk, or almond milk) (0.4 cup)
  • Butter (60 grams)
  • Vanilla extract (1.5 teaspoon)
  • Baking powder (1.75 teaspoon)
  • Salt
Filling:
  • 3 scoops of blueberries or strawberries
  • 3 scoops of sugar substitute
Topping Cream:
  • Heavy cream (120 gram or half a cup)
  • Cream cheese (226 grams)
  • Vanilla extract (1 teaspoon)
  • Sugar substitute (3 teaspoons)

The Cake Steps:
  • Sift the almond flour. Do so gradually because it takes a little more time than regular flour. Continue sifting until all flour is light and has no clumps.
  • Add a pinch of salt
  • Zest some of your lemon, zest as much as YOU like
  • Get your mixer and beat your butter, you can also use an oil of your choice instead if you’d like.
  • Add your eggs and let the mixer continue beating the ingredients then add your milk and vanilla extract and continue beating the ingredients.
  • Grab your sifter almond flour and your baking powder and stir them well together.
  • Add your wet ingredients and gently fold the wet and dry ingredients together.
  • Add a small splash of your fresh lemon juice (optional)
  • Add your berries
  • Preheat your oven on 350 F
  • Put your mix on your round cake pan
  • Put your cake in the oven for 45-50 minutes
  • Take the cake out of the oven.
  • Let it cool down in the pan
  • take it cake out of the pan and let it cool down for an hour
The filling Instructions:
  • Add your berries with your sugar substitute and some lemon juice on a small pan on medium heat
  • Give it a quick boil until you get all the berry juice
  • Strain the berry juice to the side really well
The topping Cream instruction:
  • Beat your heavy cream then put in the side then beat your cream cheese and add on it your sugar substitute and continue whipping it then add your previously whipped heavy cream and continue whipping
  • Add a teaspoon of vanilla extract then continue whipping the ingredients
  • Carefully cut the cake in half. Add your berry and cream filling on the bottom half
  • Put the top half on and neatly cover your cake with the rest of your cream
  • frosting and top the cake with some fresh berries!
  • And we’re done!
