Keto Breakfast – Easy Frittata
Ingredients
- 5+ Eggs
- Butter
- Parmesan Cheese or any cheese of preference
- Cherry tomatoes
- Small onion
- Mini Bill Pepper
- Mushrooms
- Spinach
Toppings:
- Parsley
- Dill
Instructions
- Begin by slicing all the vegetables, onion, and mushrooms.
- On medium heat, add a piece of butter on a pan then add the sliced onion and mushrooms and give them a stir until they get a nice almost-golden color.
- Then add the rest of the sliced vegetables, spinach, and another piece of butter and give a quick stir.
- Let cook for 1-2 minutes and give another stir.
- Take the pan off the heat
- In an bowl, whisk your eggs, I used three eggs, you can use more depending on the size of your pan and how much of a rise you want your frittata to have.
- As you whisk the eggs, add cheese and pepper and salt. Don’t add the full amount of cheese yet, just had half of the amount.
- Add all the cooked vegetables to the bowl and give another good whisk.
- On low heat add the egg mixture to the pan, and gently stir the everything
- Then on medium heat, cover the pan with a lid and leave it on heat for 2 minutes, then take off the lid.
- Now take your pan off the heat, add the rest of the cheese on the frittata mixture, and put it in the oven to bake for 10 minutes.
- Now take the frittata out and top it with chopped parsley and dill, and it’s ready to serve!.
