Begin by slicing all the vegetables, onion, and mushrooms.
On medium heat, add a piece of butter on a pan then add the sliced onion and mushrooms and give them a stir until they get a nice almost-golden color.
Then add the rest of the sliced vegetables, spinach, and another piece of butter and give a quick stir.
Let cook for 1-2 minutes and give another stir.
Take the pan off the heat
In an bowl, whisk your eggs, I used three eggs, you can use more depending on the size of your pan and how much of a rise you want your frittata to have.
As you whisk the eggs, add cheese and pepper and salt. Don’t add the full amount of cheese yet, just had half of the amount.
Add all the cooked vegetables to the bowl and give another good whisk.
On low heat add the egg mixture to the pan, and gently stir the everything
Then on medium heat, cover the pan with a lid and leave it on heat for 2 minutes, then take off the lid.
Now take your pan off the heat, add the rest of the cheese on the frittata mixture, and put it in the oven to bake for 10 minutes.
Now take the frittata out and top it with chopped parsley and dill, and it’s ready to serve!.
